Catalin Varela
Head of European operations & Italy Expert
Recognized as the pioneer of celiac travel consulting, Catalin launched her business, The Celiac in Italy , in 2020 to fill a long-overlooked gap and has since helped hundreds of gluten-free travelers explore Italy with safety, confidence, and joy. With Celiacs in Europe, she leads a team of trusted local experts in six countries, ensuring gluten-free travelers receive the same high standard of care wherever their journey takes them.
Catalin was diagnosed with celiac disease in 2016 and has lived in Florence for nearly five years, giving her a deep understanding of both the gluten-free landscape and the realities of navigating another culture with dietary restrictions. She holds a degree in Medical Anthropology from Goddard College, where she wrote her thesis on how different countries approach gluten-free eating and how that impacts quality of life for celiacs. She is also a Certified Integrative Nutrition Health Coach, a Celiac Disease Foundation Certified Patient Advocate, and ServSafe Allergens certified through the National Restaurant Association.
Catalin works in close collaboration with the Italian Celiac Association of Tuscany to improve English-language resources for celiac travelers, and her expertise has been featured in interviews, articles, and media coverage across the globe.

Lucia, a native Athenian and public health enthusiast, was diagnosed with celiac disease six years ago—an experience that gave her lifelong love of Greek cuisine a new meaning. Having lived and traveled extensively abroad, she brings a global perspective to the joys and challenges of gluten-free living, while remaining deeply connected to her roots.
Greek cuisine is still her favorite, and she’s passionate about helping others experience it safely and authentically.
