Catalin Varela is the founder of The Celiac in Italy, Head of European Operations at Celiacs in Europe, and recognized as the pioneer of celiac travel consulting. Diagnosed with celiac disease in 2016 and now based in Florence, she combines deep local knowledge with firsthand experience to help travelers explore Italy with confidence, ease, and joy. Since launching her business in 2020, Catalin has personally supported hundreds of gluten-free travelers—from solo adventurers to families and honeymooners—making sure every trip is as safe as it is delicious.
She holds a degree in Medical Anthropology where she wrote her thesis on global approaches to gluten-free living. She works in close collaboration with the Italian Celiac Association of Tuscany to improve English-language resources for celiac travelers, and her expertise has been featured in interviews, articles, and media coverage across the globe.

What is a gluten-free travel consultation?
A gluten-free travel consultation is a personalized planning session with a local expert who understands the gluten-free landscape in their country. You’ll get custom recommendations for safe restaurants, bakeries, shops, and tips for navigating menus, allergen laws, and cultural norms.
What's the difference between the consultation tiers?
Each tier offers different levels of support!
The Economy level includes a half-hour video consultation with a local expert.
The Business level includes a full-hour video consultation with a local expert, a follow-up email with notes, and option to help with up to 3 reservations (reservation service not available in the UK).
The First Class level is a full-hour video consultation with a local expert, a follow-up email with notes, option to help with up to 5 reservations (reservation service not available in the UK), and an additional email exchange if needed.
Who are the consultants?
All of our consultants live in the country they represent, speak English and the local language, and follow a strict gluten-free diet due to celiac disease or medical necessity. They’ve been carefully chosen for their expertise, local knowledge, and passion for helping others travel safely.
What is the benefit of working with a gluten-free travel consultant?
Working with a gluten-free travel consultant takes the stress and guesswork out of planning your trip. Instead of spending hours online searching through blog posts and Facebook groups, you can rely on our expertise and firsthand experience. We’ve already done the research and vetted the best gluten-free dining options, so you can travel confidently and enjoy your trip without the worry of cross-contact or misinformation. During your consultation, you’ll have the consultant’s undivided attention for either a half-hour or full-hour session, where together you can address all your questions and concerns. The consultation is completely personalized, ensuring that you set off on your adventure with peace of mind and a plan tailored specifically to your needs.
Do you help with general trip planning too?
Yes! While our focus is on the gluten-free side of travel, we’re happy to share advice on local attractions, transportation, and cultural tips to help round out your itinerary.
Can I book a consultation even if I haven't finalized my travel dates yet?
Absolutely! In fact, it can be helpful to consult with us early in your planning process so we can suggest gluten-free-friendly cities, regions, and experiences. Clients often book an Economy consultation first to get the general lay of the land, and then book a Business or First Class consultation closer to their trip to iron out the details.
What happens after I book?
When you book, you’ll be asked to fill out a short intake form so your consultant can learn more about your travel plans, preferences, and dietary needs. You’ll be able to view their availability and choose the time that works best for you. Right after booking, you’ll receive an email with your Google Meet link for the session. From there, your consultant will prepare for your call and meet you at the scheduled time. If something comes up, just let us know—otherwise, please plan to join on time. Consultants will wait up to 15 minutes before considering the session a no-show.
